Vinification: Selection of the best grapes. Soft pressing. The must is left to decant in stainless steel tanks for several hours. Following the decantation, the must is transferred to another tank where the temperature is lowered to 2-3 °C to ensure the preservation of the juice and to prevent the fermentation. Following this phase, begins the fermentation of the must in controlled-temperature, of 16 - 18°C, pressurized stainless steel tanks until the alcohol level reaches 5,5%. This is the phase in which the fizz, typical of Moscato, is produced, obtained by trapping the CO, a natural by-product of fermentation, in the tank until the internal pressure has reached a maximum of 2 atmospheres
