EXCELLENT WINES FROM EXCELLENT VINEYARDS

All the wines are from our winery: The Vinum Società Agricola.

Most of our wines are made from organically grown grapes.

We are convinced that the quality of a wine is determined in the vineyard. For this reason, we have worked over the years to preserve and promote the fertility of the soil, cultivating native clones and preserving historical varieties at risk of extinction, respecting biodiversity and territory. Our work in the vineyard consists of adopting ecologically safe agronomic practices to eliminate the use of synthetic chemicals and increase, at the same time, safety for the environment and human health. Therefore our cultivation method involves not only phytosanitary defense, with copper and sulfur, but also plant choices, pruning in compliance with the lymphatic cycles, selection of shoots, care of the leaf wall with continuous topping, and defoliation of precision to avoid stagnation of humidity and prevent sunburn, soil tillage, inter-row management, weed control, canopy management, up to harvest. Our goal is to arrive at a production that optimizes the vineyard's quality while respecting the environment. This rigid production process is achieved with a continuous presence in the vineyard to observe and monitor the natural cycles of the vine and adversity. Therefore, the interventions are performed only after careful evaluation to minimize the treatments and offer a truly natural product.

Harvest: By hand with selection of the grapes

Vinification: Soft pressing. The must is left to decant in stainless steel tanks for several hours. After decanting, the must is transferred to another tank where the temperature is lowered to 2-3 ° C to ensure the conservation of the juice and to prevent fermentation. Following this phase, the fermentation of the must begins at a controlled temperature, of 16-18 ° C, in pressurized stainless steel tanks until the alcohol level reaches 5.5%. Aging: At least 6 months in steel

Tasting notes: Straw yellow color with a pleasant mousse of fine bubbles. Intoxicating aromas of orange blossom, white peach, and pink on the nose. Inviting aromas of peach and mineral notes to the taste. Light, vibrant, refreshing
